3 TBSP vegetable oil
1 red bell pepper, cut into 1/4" dice
1 yellow bell pepper, cut into 1/4" dice
6 slices firm white sandwich bread, crusts discarded
1 lb lump crab meat (in container at Costco)
1/4 c cilantro, finely chopped
1/4 c mayonnaise
2 TBSP Old Bay Seasoning
1 jalapeno, finely chopped (wear gloves)
1 TBSP garlic, minced
salt & pepper to taste

Directions:
Saute bell peppers in 1 TBSP oil over med-high heat until soft. Using food processor, grind bread into fine crumbs. Stir all ingredients together and chill 1 hour to 1 day. (Chilled crab cakes will not crumble as much when cooking.) Divide into 8 portions, saute in remaining oil, 3-5 minutes a side or until golden brown.
