8 potatoes, peeled & cut into bite sized pieces
2.5" block from box of Velveeta
1 TBSP butter
milk in equal amount to the Velveeta
1 onion, finely chopped

1/4 c panko breadcrumbs
1/4 c regular breadcrumbs
2 TBSP butter
1 TBSP parmesan cheese, grated

Directions:
Boil potatoes for 10 minutes, no more. Spray Pam into a casserole dish and add potatoes. In a microwavable bowl, combine Velveeta, butter, milk until it all melts, maybe 1-2 minutes. Stir sauce, taste and adjust ingredients if needed. Sprinkle chopped onion over potatoes. Add cheese mixture and stir everything. Combine all breadcrumbs in a skillet, add butter and saute until browned. Then add parmesan cheese into the breadcrumbs. Add to top of potato/cheese mixture. Bake at 350 until it bubbles up through the breadcrumbs, maybe 20-30 minutes.
