1/4 tsp salt
1/8 tsp black pepper
1/2 c Italian bread crumbs
20 lge (2 - 2 1/2-inch) in diameter white mushrooms (1 lb)
2 T unsalted butter
1 medium onion finely chopped (1 c)
1 lge shallot
2 cloves garlic, finely chopped
1/2 tsp dried oregano, crumbled
1/2 c grated Parmigiano-Reggiano cheese
1/4 c chopped fresh parsley

Directions:
preheat oven to 400 º. remove mushroom stems and finely mince; saute in melted butter over moderately high heat, stir until golden about 5 min.; add onion, garlic, oregano and salt and pepper and saute stirring occasionally until onion is golden; about 5 min. cool slightly; add bread crumbs, cheese and parsley, toss well;, oil large shallow baking dish stuff mushroom caps with mixture pressing gently, bake in middle of oven about 20 minutes.
