12 pounds tomatoes, peeled
1 cup sliced onion
1 cup white vinegar
1 1/2 t. whole cloves
1 ½ inch cinnamon stick
½ t whole allspice
1 t. celery seed
1 ½ t. mixed pickling spice
4 small dried red peppers
¾ - 1 c. white sugar
4 t. salt (to taste)

Directions:
Directions:
Combine onion, vinegar and spices. Bring to boil. Steep.
Simmer tomatoes. Press through sieve. Add sugar. Cook until volume is half. Strain vinegar and add with salt to tomatoes.
Boil until thick stirring constantly. Store in dark place, makes 2 ½ pints.
