3 zucchini, large
4 eggs
1 C. heavy cream
1 C. milk
1 C. Swiss cheese
1/4 C. parmesan cheese
8 T. flour
Salt and pepper to taste
Pinch of nutmeg

Directions:
Directions:
Wash and grate the zucchini. In a large pan, sauté zucchini over medium/high heat in olive oil (about 1 tablespoon). Cook until zucchini has released all of its water and becomes a bit crispy.
Meanwhile, in a large bowl, beat eggs until they become foamy. Then add all the remaining ingredients. Incorporate zucchini in mixture bowl and blend well. Butter oven dish. Bake at 375º F for 45 minutes.
