2 c. Flour
1 T. baking powder
½ t. salt
1 T. sugar
2 eggs
1 2/3 c. milk
4 T. oil
1 apple, peeled, cored and diced

Directions:
Directions:
Sift together flour, baking powder, salt and sugar. Separate eggs and beat yolks. Add milk and mix. Gradually add yolk-milk mixture to dry ingredients, mixing until smooth. Add melted shortening or oil. Beat whites until stiff and fold into batter. Add apple and mix. Bake 3-4 minutes in waffle iron.
