1c. Margerine
1 c. sugar
½ c. evaporated milk
1 ½ t. grated lemon zest
4 c. flour
1 t. baking soda
1 T ground cinnamon
1 T. ground nutmeg
1 t. ground cloves
¼ t. ground black pepper
1 T crushed cardamom seeds
1 t. crushed anise
Confectioner’s sugar glaze

Directions:

Cream margarine until light and fluffy. Add sugar gradually and continue beating until well blended. Add milk and lemon rind and mix well. In another bowl combine flour, baking soda, and ground spices. Mix in cardamom, anise and add gradually to the creamed mixture, stirring thoroughly. Roll into balls about one inch in diameter and place on an ungreased cookie sheet and brush lightly with the glaze. Bake at 350 for about 20 minutes. Makes about 5 ½ dozen.

We usually double the spices. Fresh ground spices are always better. These cookies do best after being aged about two weeks in an airtight container.
