3 egg whites
1 T. lemon juice
3 drops bitter almond oil
300g unpeeled ground almonds
Thin wafers
250g powdered sugar
10g. vanilla sugar
1t. ground cinnamon

Directions:
Directions:
Beat eggwhites and lemon juice. Sieve in powdered sugar in small portions and beat well. Reserve several tablespoons full for topping.
Add spices and mix. Add half of the almonds and mix. Add the rest until dough is no longer very sticky. Roll out on sugared surface and cut to shape for wafers. Apply to wafers and seal surface with egg white snow. Bake for 20 minutes at 300 degrees.
Note: 2 egg whites beaten took 7c. almond meal made in blender from whole almonds.
