2c. Sugar
2c. Water
2c. Strong vinegar
Small, young beets

Directions:
Directions:
Make a syrup of sugar, water and vinegar, bring to a boil.
Pour over beets, and simmer 15 minutes. Pack into sterilized jars and seal.
Beets should be in slices or cut not much larger than one cubic inch otherwise the 15 minute simmer leaves the beets too crunchy.
Note: three times this recipe made 10 quarts of pickled beets out of about
