2 1/2 C. Fresh Peach Slices
1 Tsp. Lemon Juice
1/4 C. Sugar
1/2 C. Sugar
3 Tsp. Corn Starch
2 Tsp. Butter
1/8 Tsp. Salt
1/8 Tsp Almond Flavoring
1 Pastry Shell

Directions:
Directions:
Put Peach Slices in a bowl.
Drizzle Lemon Juice over them.
Mix lightly.
Add 1/4 Cup Sugar and toss gently.
Let stand for one hour.
Line pie pan with Pastry.
Bake and set aside to cool.
Drain Peaches after one hour.
Reserve syrup in a 1 C. Measuring cup.
Add Water to fill the 1 C. Measuring cup.
Blend the 1/2 C. Sugar with Corn Starch in a saucepan.
Add the reserved Juice and Water Mix.
Stir Continuously.
Bring Mixture to a boil.
Let boil rapidly for three minutes or until thick.
Remove from the heat.
Blend in Butter, Salt and Almond Flavoring.
Add the Peach Slices and mix gently.
Pour into the cooled Pastry Shell and let cool.
If desired top with Cool Whip.
