Oregon Strawberry Cupcakes Recipe

1 box white cake mix
1 3oz strawberry flavored gelatin
2/3C vegetable oil
1/2 C Oregon Hood strawberries or sliced frozen strawberries in syrup, thawed
4 large eggs
1/2 C water

Icing

1/2 C (1 stick) butter at room temp
1 C confectioners sugar
1 C Oregon Hood strawberries or frozen strawberries in syrup, thawed

For the cupcakes: preheat oven to 350.

With electric mixer, beat cake mix, gelatin, oil, strawberries and 1/2 C water until fully combined.
Add eggs, one at a time beating well after each addition. Pour batter into cupcake liners.
Bake until toothpick comes out clean, about 20 “. Remove from pan when cooled.

Be certain your butter is fully warmed up or you will have trouble getting your glaze to smooth out. Use blender/food processor to mix if you have lumps.

For icing, blend butter, sugar and strawberries until smooth and creamy. This may take a few minutes depending upon the temp of the butter. Glaze/icing will be slightly runny and not as firm as most icing.

Poke holes in cupcakes and pour icing over cupcakes allowing some to seep into cakes.

Add 1/2 strawberry for garnish.

Hood strawberries are only available in the Pacific northwest for a short period of time in early summer. Because they have a very high sugar content, they don't ship very well but if you can get them, they are well worth it!
