1 heaping tablespoon virgin organic coconut oil
2 cans organic black beans, drained
2 cans organic pinto beans, drained
1 large can (28 ounces) Muir Glen organic diced fire roasted tomatoes
1/4 cup chopped fresh cilantro
2 tablespoons Bragg's "Liquid Aminos"
1 heaping tablespoons cumin
1 tablespoon spice blend such as McCormick Montreal Steak or Trader Joe's 21 Seasoning Salute (avoid ones with soy)
1 heaping teaspoon sea salt
1 heaping teaspoon garlic powder
1 heaping teaspoon onion powder

1. Rub the coconut oil on the bottom of a crockpot. Medium sized works well for this recipe.

2. Add all ingredients and mix together.

3. Cook on High setting for at least 4 hours.

4. Serve by itself or with rice.

I typically use dry beans for this recipe. If you want to use dry beans, soak the equivalent of 1 bag overnight, rinse then drain. Use in place of the canned beans.
