1 avocado slightly soft to touch, chopped
1 finely chopped green onion
1 teaspoon organic apple cider vinegar
1 teaspoon yellow prepared mustard
1/8 teaspoon sea salt
1/8 teaspoon pepper

1. Mash together the chopped eggs, onion, and avocado with a fork until well blended.

2. Add the remaining ingredients. Stir until well blended.

3. Serve open-faced on your favorite toast.
