COOKIE DOUGH:
1 cup butter, softened (use organic)
1 cup firmly packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup chopped nuts
3 cups quick cooking oats

OPTIONAL (ICING:
1 cup butter, softened (use organic)
2 pounds powdered sugar - sifted (use organic)
1/2 cup strong hot coffee (approximately)

Directions:
Directions:
1. In a large bowl, cream butter with both sugars until fluffy. Beat in eggs and vanilla.

2. Sift the dry ingredients together and add to the creamed mixture. Stir in oats and chopped nuts.

3. Halve cookie dough and pat each into a roll. Wrap each in waxed paper. Refrigerate until firm.

4. Cut in thin slices. Bake at 350 degrees for 10-12 minutes or until lightly browned. Let cool.

5. For the icing, cream the butter. Add the sugar gradually. Add enough of the hot coffee until it is of spreading consistency. Ice the cookies.

Cookies are great with or without the icing. The icing recipe is Aunt Martha Knight's. She also likes the coffee icing on yellow cake.
