3 cups water
1 heaping tablespoon virgin organic coconut oil
1 1/4 cups washed brown rice
1/4 cups red quinoa
1/4 teaspoon tumeric
1.4 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon onion salt
1/4 teaspoon paprika
4 large garlic cloves, crushed
4 large fresh basil leaves
lime wedges
avocado slices

Directions:

1. Smear coconut oil onto the bottom of a stainless steel rice cooker.

2. Add all of the ingredients, except for the lime and avocado. Stir.

3. Cook until the water evaporates or until the rice cooker switches from "cook" to "warm."

4. Garnish with lime wedges and avocado slices.

I have a rice cooker with a stainless steel insert which makes this dish especially easy! A steamer basket is available so you can steam the vegetables in the same pot while the rice is cooking.
