6 oz Egg White (5 large eggs) room temp
1/4 tsp salt
1-3/4 cup sugar
6 oz chopped glace cherries
1 1/4 sticks (10 T) butter or margarine, melted
1/4 tsp vanilla
1 3/4 cups sifted cake flour
2 cups pecans, finely chopped

Directions:

Line 9 x 13 pan with buttered wax paper (or parchment paper). Beat egg whites with salt until foamy. Gradually add sugar and beat egg whites until they form stiff peaks.

Combine pecans, cherries, butter and vanilla.. Fold into egg whites alternating with flour. Spread into baking pan. Bake in pre-heated 325º oven, until dry, about 45 minutes. Let cool, before cutting into squares.

Roll in fine granulated sugar after cutting.

Yields: Apox. 4 Dozen
