Peppermint Patty Brownies Recipe

1 1/2 c margarine or butter
3 c white sugar
1 tbsp vanilla extract
5 eggs
2 c all-purpose flour
1 c unsweetened cocoa
1 tsp baking powder
1 tsp salt
24 small peppermint patties (York)

Icing:
2 c icing sugar
2 tbsp butter
2 tbsp cocoa
2 tbsp boiling water
2 tsp vanilla

Directions:
Directions:
In large bowl, mix margarine, sugar and vanilla. Beat in eggs till well blended. Stir in flour, cocoa, baking powder and salt. Blend well. Reserve 2 cups of batter, set aside. Grease 13 x 9 inch pan. Spread remaining batter in prepared pan. Arrange peppermint patties in a single lawyer over batter about 1/2 inch apart. Spread reserved 2 cups batter over patties.

Bake in at preheated 350º oven for 50 - 55 minutes until brownies begin to pull away from sides of pan.

Icing:
Mix ingredients together with electric beaters. Add icing immediately after removing from oven so that the icing will melt into a shiny glaze. Cool completely in pan on a wire rack.
