2 oz. rice vermicelli
8 rice wrappers
1 1/3 T. Basil
3 T. Mint
3 T. Cilantro
2 Lettuce Leaves
1 c. chopped seafood (shrimp, fish, scallops, crab or lobster)

Sauce 1: 4 t. fish sauce, 1/4 c. water, 2 T. fresh lime, 1 clove garlic, minced, 2 T. sugar, 1/2 t. garlic chili sauce.
Sauce 2: 3 T. Hoisin sauce, 1 t. peanuts, chopped

Mince the herbs and mix. Chop lettuce. Cook rice vermicelli according to directions. Soften rice wrappers, one at a time and fill with herbs, lettuce, seafood and vermicelli. Tuck sides over and roll. Repeat until all the wrappers are finished and the fillings used up.

Mix the ingredients of the sauces together. Use them for dipping spring rolls.
