2 large chicken breasts about 2 lbs skinned and boned
1 14 oz can beef broth
1 14 oz can chicken broth
1 14 oz can Mexican style tomatoes diced
small chopped onion or half
1/4 c chopped green pepper
1 8 3/4-oz can Mexican corn undrained
1 tsp chili pwdr
1/2 tsp gr cumin
1/8 tsp ground pepper
Tortillo chips about 3 cups coarsely crushed
4 oz Monterey jack cheese shredded about 1 c
1 avocado peeled seeded and cut into chunks
snipped cilantro
lime wedges

cut chicken into 1 in cubes set aside. In a lg saucepan combine beef and chicken broths , undrained tomatoes , onion, and green peppers. Bring to a boil add chicken and reduce heat. cover and simmer for 10 min. add corn, chili pwdr. cumin and black pepper. simmer another 10 min. covered . To serve, place crushed tortilla chips into each bowl. ladle soup over chips. sprinkle with cheese,avocado, and cilantro, squeeze lime and enjoy!!!
