5-6 large carrots
1/4 c reserved carrot water
1/4 c mayonnaise
1/4 c sour cream
2 tbsp chopped onion
1 tbsp horseradish
salt and pepper to taste
1 tbsp butter, melted
1/2 c bread crumbs

Directions:
Directions:
Peel, slice and cook carrots until tender and crisp. Reserve cooking water.

Place cooked carrots in a shallow casserole dish. Combine carrot water, mayonnaise, sour cream, onion, horseradish, salt and pepper and pour over carrots. Combine melted butter and bread crumbs and sprinkle over top.

Bake in a preheated 375º oven for 30 minutes.
