2 sprays cooking spray
2 Tbsp EVOO divided
2 Tbsp minced garlic
1 Tbsp fennel seed
1 ½ tsp dried oregano
1 ½ tsp salt divided
1 ¼ tsp black pepper divided
2 lbs lean pork loin (or 2 lb whole boneless roast)
2 medium green peppers
1 large red onion
24 uncooked red baby potatoes cut in half if big

Directions:
Directions:
1. Preheat oven to 400
2. Spray roasting pan with cooking spray
3. In a small bowl combine 1 Tbsp oil, garlic, fennel seeds, oregano, 1 tsp salt, 1 tsp pepper. Rub mixture all over pork and place in pan.
4. Add vegetables and potatoes to pan; drizzle with the remaining 1 Tbsp oil. Sprinkle with remaining ½ tsp salt & ¼ tsp pepper. Toss to coat.
5. Roast uncovered tossing vegetables and potatoes half way through about 1 hour.
