8 sun-dried tomatoes (not in oil)
2 T capers chopped
1 lge. shallot minced
1/3 - 1/2 c mayonnaise (add more if needed)
4 T thinly sliced basil leaves divided

Directions:
place eggs in lge. pan filled with cold water; bring to boil over medium heat; as soon as it boils reduce to simmer and cook 20 min.; fill bowl with ice cubes and cold water; when eggs are cooked, chill in ice water; peel and slice eggs in half lengthwise; remove yolks and mash well or use potato ricer; place sun -dried tomatoes in glass dish in microwave, cover with water and microwave 2 min., let tomatoes sit for several min. till soft; drain on paper towel and finely mince; mince shallot; combine yolks, tomatoes, capers, shallot, mustard, mayonnaise and 2 T basil in small bowl and mix; place tsp. of mixture in cut egg white; garnish with tiny basil leaf

tip: if egg whites roll, around, cut tiny slice off bottom; if you want to be fancy place yolk mixture in pastry bag with star tip and pipe into egg whites; Make extra, they always disappear
