1 onion, very finely chopped
5 cloves garlic, very finely chopped, plus 2 T. minced fried garlic for garnish
1 lb. ground pork butt
1 T. coarsely chopped fresh basil
2 T. chili sauce, such as Sriracha or Sambai
1/4 c. panko bread crumbs
2 large eggs, lightly beaten
Salt and freshly ground pepper
2 T. minced fresh ginger
2 qt. pork stock
1/4 c. black sweet soy sauce, such as Kwong Hung Seng
1/4 c. fish sauce
1 tsp. blended oil, 90% canola and 10% olive
8 pieces baby bok choy, split

1. In a saute pan, cook the garlic and onion in a bit of oil. Chill briefly, and then add to the ground pork.
2. Mix together the basil, chili sauce, bread crumbs, and beaten eggs and combine with the pork. Form the mixture into 1-ounce meatballs and steam until cooked through, about 20 minutes
3. In a large saucepan, cook the minced ginger in oil.
4. Add the pork stock and season with the fish sauce and soy sauce
5. Add the pork meatballs and braise for 30 minutes
6. Taste and adjust the seasoning, add the bok choy to the soup, and cook for about 3 minutes
7. Divide the soup equally among 4 bowls and garnish each with some fried garlic.
