3 Bananas Smashed, overly ripe bananas work great!
1 Egg, beaten
1 C Sugar
1/3 C Melted Butter (Microwave, in 1 C Pyrex Measuring cup)
1 1/2 Cups All Purpose Flour
1 teaspoon baking soda
Pinch of salt
1 teaspoon Vanilla
2 shakes of Cinnamon-- I like extra in mine though

Directions:

Preheat Oven to 350 degrees
Grease or grease and flour a bread loaf pan
Combine first 4 ingredients: bananas, egg, sugar, and melted butter in that order.
In separate bowl combine next 3 ingredients, flour, baking soda, and salt.
Combine the two bowls together.
Whisk while adding the vanilla and cinnamon.
Bake for 1 hour.

Use plastic knife around the edges of pan, turn loaf upside down, and the bread should come right out!
Serve with butter, and while still warm... although the leftovers are great too!
