Ingredients: 2 cups granulated sugar 1 cup light corn syrup 2 cups heavy cream, heated to lukewarm ¼ t salt ¼ cup butter, unsalted 1 T vanilla

Directions:In a deep heavy saucepan, mix sugar and syrup. Stir until sugar dissolves and mixture boils. Cook to 270 degrees without stirring. Slowly add one cup of cream, making sure that the mixture never stops boiling. Cook to 250 degrees, stirring frequently. Carefully add the remaining cup of cream very slowly, about a tablespoon at a time. Add salt and butter. Cook to 250 degrees, stirring as necessary. Remove from heat. Add tablespoon vanilla. Pour into buttered 9 inch square and cool. Cut into small rectangles and wrap in waxed paper. Store in refrigerator. Recipe takes a long time to cook, but is worth it. May be doubled, in a very deep pot. |

Notes: Be sure to use a very deep as the mixture really boils up when you add the cream and it can burn you very badly. A lot of trouble to cut and wrap, but always fondly received at my parties, with people asking to take them home. They are worth all the trouble...and who else does it? Because of the trouble, I usually double the recipe and use a 9 x 13 pan to cool them. Don't cool them too much or they're very hard to get out of the pan.
