3 large cucumbers peeled and sliced
1 small container of sour cream
3 small finely sliced onion
3 tbsp. rice vinegar
3 tbsp. sugar
2 tsp. salt
pepper

Directions:
Directions:
Mix together cucumbers, onions, and salt. Making sure salt has coated all of the cucumber. Place in refrigerator and let stand for about an hour. Pour off liquid, squeezing the cucumbers with your hands. Add sugar, vinegar, and pepper. Mix thoroughly. Taste; if necessary add more sugar and vinegar. Cover and refrigerate for at least two hours. Preferably 6 to 8 hours. Stir in sour cream and serve. Can add some dill weed if you desire.
