Ingredients:
Ingredients:
1 quart mason jar filled with fresh lilac blossoms picked from the stems.
2 T fresh lemon juice
4 cups sugar
1 box commercial powdered pectin

Directions:
Directions:
Cover the lilac blossoms with boiling water. Cap with lid and let steep 24 hours on counter. Next day strain the liquid from the blossoms through cheese cloth. Compost spent lilac blossoms. To 3 cups of the infused liquid add the lemon juice. Next add 1 package of commercial powdered pectin. Bring this just to a boil, then add 4 cups sugar. Bring back to a boil and boil hard for 3-4 minutes. Take off stove and skim off foam. Pour into jelly jars and seal. I turn the jars upside sown for 5 minutes for a quick seal technique but you can put jelly in standard water bath to seal.
