1 12 oz can salmon
1/4 cup finely chopped onion
1/4 cup bread crumbs (seasoned or plain)
1/4 cup panko bread crumbs
1/4 cup Miracle Whip
2 eggs. beaten
1 T dried parsley flakes
Can use l/4 cup corn meal and 1/4 cup flour in place of bread crumbs
Flour and oil for frying
Serve with tartar sauce or vinegar

Drain canned salmon, reserving some of the liquid
Remove any skin and bones
Finely flake
In a large bowl, beat eggs and add rest of ingredients
Add flaked salmon
Form into patties
If mixture appears too dry, add a small amount of reserved liquid
Heat oil in skillet, when hot, roll patties in flour and fry
until brown on both sides
