6 to 8 lb. standing rib roast
Salt and pepper to taste
1 clove garlic, mashed

Directions:
Directions:
1. Roast must be at room temperature.

2. Preheat oven to 375º. Rub roast with garlic, salt and pepper.

3. Place on rack in roasting pan, rib side down.

4. Bake 1 hour, then turn oven off. Do Not Open Oven. Roast must remain in oven for at least 3 hours, and no more than 5 hours.

5. 30 to 45 mins. before serving, turn oven back on to 375º. Still, Do Not Open Oven.

6. Remove from oven and allow to cool for 15 mins., before carving.

Note: This process can be used on roasts up to 10 lbs. The final cooking time can be adjusted according to the degree of desired doneness. 30 mins. produces a rare roast, and opening the oven door ruins the process.
