1 T. vegetable oil
1 (4-5 lb.) lean boneless pork roast, cut into 3" pieces
8 oz. beer
1 large white onion, diced
4 cloves garlic, minced
1 T. chipotle powder
2 tsp. cumin
1 tsp. chili powder
1&1/2 tsp. salt
1 tsp. black pepper

Directions:
1. Heat oil in large skillet over high heat.
2. Add the pork and sear until browned (2 min).
3. Transfer to slow cooker and add remaining ingredients. Stir to combine
4. Cook on low for 6-8 hours until the pork is completely tender and shreds easily with a fork
5. Once the pork is cooked, preheat boiler to high heat and prepare 2 baking sheets with foil.
6. Use fork to shred meat into bite-sized pieces and spread evenly in a single layer. Reserve remaining broth.
7. Place one sheet under broiler for 5 min. Use spatula to toss the pork and ladle 1/4 c. of broth over the pork. Broil for an additional 5 min to get meat more crispy.
8. Remove and ladle additional 1/4 c. broth over crispy pork
