1 cup Nutriwhip , can be the light one
1 pkg Mascarpone cheese 450g, can also be the light one
2 Eggs
2 Egg whites
2 tbsp sugar
½ cup Kahlua or other coffee liqueur (optional)
2 cups espresso coffee (I make stronger Keurig coffee)
2 pkgs Milano lady fingers , 150 g
Cocoa powder to dust

12”x13” glass pan (or adapt to what you have)
1 large bowl, 2 smaller bowls

Take out mascarpone cheese 30 mins before needed – it will blend better if not cold.
Make the coffee and allow to cool. You may sweeten to taste but it is optional as cookies are sugar coated.
Add in the optional coffee liqueur and allow to cool.
Whip Nutriwhip in a large bowl till soft peaks form. Mix in mascarpone cheese and put aside.
In another bowl, beat together the 2 eggs and the sugar and put aside.
In another bowl, whip the egg whites until soft peaks form and put aside.
Add the egg and sugar mixture to the Nutriwhip and mascarpone mixture in the large bowl.
Mix until blended, and then fold in the whipped egg whites.
Put the coffee in a bowl with a flatter bottom at least the length of the lady finger.
Take one lady finger at a time, dip in coffee on both sides and lay in the pan until the bottom is covered.
Add a layer of cream filling taking to edge of the pan.
Add another layer of lady fingers. Add another layer of cream.
Make sure you end with a cream layer. 2 layers of lady fingers and 2 layers of cream are usually best.
Dust with Cocoa powder.



Refrigerate at least 4-6 hours before serving.
