4 to 5 potatoes
½ cup rice
2 tomatoes, sliced
1 onion, sliced
1 cup water or more if needed
Salt to taste

Lightly grease a casserole dish. Thinly slice potatoes. Place a layer of potatoes on the bottom of a casserole dish. Put a layer of washed rice on top. Add a layer of thinly sliced tomatoes. Top with thinly sliced onions. Top with another layer of sliced potatoes. Add the water. Bake at 350° about 45 to 60 minutes, or until tender and lightly browned. Add salt to each layer of potatoes.

This is also called "Schuhe Krapfen" meaning food that a poor shoemaker would eat. Very easy to make. May omit tomatoes. May add sliced ham.
