2 c. flour
2 tsp. baking powder
3/4 tsp. salt
3 egg yolks, beaten
1-3/4 c. milk
1/3 c. vegetable oil
3 egg whites, stiffly beaten
Vermont maple syrup
Powdered sugar

Directions:
Heat up electric waffle iron griddle to medium heat. Brush all surfaces with vegetable oil.

Blend dry ingredients; add yolk and milk until combined. Stir in oil; fold in egg whites. Do not overmix. Pour 1/3 c. batter onto pre-heated, pre-oiled griddle. Bake 4 minutes or until done.

Serve each waffle immediately with Vermont maple syrup and butter, or serve with your favorite fruit and powdered sugar.
