Grandmother Waldon would make this for us when we visited because it was one of our favorite meals. There is no recipe because she made it with the leftover ham and she would adjust to how many people she was feeding.

Boil the bone of a ham that has some "scrappy" ham left on it. Pick all the ham off and put the meat back in the broth.
Boil some eggs.
Make a crust. Cut it to the size of casserole dish you are using. Put the scraps of dough in the broth and cook like dumplings.
Add some butter and a little milk to thickened broth.
Slice eggs and add to broth.
Put it in the casserole dish and cover with pie crust. Dot the top with butter.
Bake at 400º until brown.
