1 pound of pizza dough at room temperature
1/4 c tomato or pesto sauce
3 ripe tomatoes, seeded and chopped
8 oz fresh mozzarella cheese, thinly sliced

I add a few torn basil leaves

Prepare outdoor grill for grilling over medium heat. Spray two large cookie sheets with cooking spray. On work surface, divide dough into 4 equal pieces; spray with cooking spray. With fingertips, press each piece of dough into a round about 1/8 in thick. Transfer 2 rounds to each prepared cookie sheets, cover with plastic wrap. (Bring dough rounds and remaining ingredients to grill for final assembly). Place rounds on hot grill rack over medium heat. Cover and cook until grill marks appear on the underside and dough stiffens, 3 min. With tongs carefully transfer back to cookie sheet, grill-mark side up. Spread sauce and other ingredients on the top and return to the grill, topping side up. Cover and cook another 2 - 9 minutes. Cut into wedges and serve.
