1 cup brown sugar
1 cup white sugar
2½ cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
1 teaspoon ginger
½ teaspoon cloves
1 teaspoon salt
1 cup oil
1 tablespoon vanilla
3 eggs
2 cups grated unpeeled zucchini
1 cup raisins
1 cup chopped walnuts (optional)
2 tablespoons gated orange rind (optional)

Mix dry ingredients. Add oil, vanilla and eggs and beat together. Stir in remaining ingredients. Bake in 13 x 9” pan at 350° for 45 minutes.
