6 medium baking potatoes
4 T unsalted butter
1/2 C minced onions
1/4 C creme fraiche
1/4 tsp sea salt
1/4 tsp black pepper
2 oz Caviar

Directions:
Directions:
Bake potatoes in 400º oven 35-40 min.till soft; place in refrigerator to chill; when cool, cut in half lengthwise and scoop out centers; set aside potato skin cups and filling. In saucepan, melt butter over medium high heat, add minced onions and saute until golden brown; stir in potato filling; season with salt & pepper then remove from heat; fold in creme fraiche; spoon mixture evenly into potato skins and set aside; 20 minutes before serving, place stuffed potatoes on cookie sheet in 400 º oven for 15 min; then. place heaping tsp. of caviar on each half. Can be made a day ahead.
