Crust:
1 1/2 c graham cracker crumbs
1/4 c melted butter
1/4 c sugar
1/4 t ground cinnamon

Filling:
16 oz cream cheese, softened
2 T flour
1 1/2 c sugar
1/4 t salt
1 1/2 t vanilla
4 eggs, separated
1 c light cream (1/2 & 1/2)

Directions:
Directions:
Crust: Combine crumbs, butter, sugar and cinnamon. Press mixture over bottom of well-buttered 9" spring form pan.

Filling:
Combine cream cheese, flour, sugar, salt and vanilla in mixer until smooth and fluffy. Add egg yolks, one at a time, beating well after each egg. Stir in cream. Whip egg whites until stiff, but not dry. Fold into cheese mixture and pour into pan. Bake at 325º for 1 hour or until center is set. Test for doneness using knife. Cool cake in oven by turning off heat and leaving door open. (approximately 1 1/4 hours - this keeps cheesecake from falling) Cut around edges of pan to loosen crust and remove the rim. Chill
