1/2 c. flour
1/2 c. butter
1 qt. milk
3 egg yolks
sherry wine to taste
salt
pepper
meat of three 10-12 oz. lobster tails

Directions:
Directions:
In large sauce pan blend butter and flour on over medium heat. Stir while adding about 1 quart of milk. Remove from heat. Stir some of milk into egg yolks to temper and then add back into pan. Add sherry to taste, salt and pepper and lobster meat. Add more milk for desired consistency. Serve over toast points or patty shells.
