1 small head iceberg lettuce
1/2 head romaine lettuce into a large bowl.
1/2 c. chopped pimentos, drained
1 c. sliced red onion
1 8 oz. can artichokes in brine
(not marinated)

DRESSING -
1 c. extra-virgin olive oil
1/4 c. red wine vinegar
1/2 c. freshly grated Parmesan cheese
Salt
Freshly ground black pepper

Directions:
Directions:
Break up lettuce and tear leaves in a large bowl.
Drain pimentos and with onion add to lettuce.
Drain artichoke hearts over bowl to break up and add.
Dressing-- Combine ingredients in small bowl, mix or shake well.
When ready to serve, add dressing to salad to taste.
Add cheese, salt and pepper to taste, toss well.
Serves 4-6.
