3 c cooked white rice (leftover is perfect)
3 tbsp sesame oil
1/2 white onion, diced
1/2 c diced carrots
1/2 c snow peas, chopped (frozen peas and carrots also work here)
2 tsp minced garlic
4 green onions
2 eggs, beaten
1/4 c soy sauce

Directions:
While chicken (Sweet and Sour Chicken) is baking in the oven, heat oil and cook white onion in the same pan the chicken was browned in. Once onion is translucent, add carrots and cook 2 minutes. Add peas and garlic and cook an additional minute. Add green onion and mix. If pan is too dry add a few tablespoons of canola oil. Push the mixture to the side of the skillet and stir fry the eggs until scrambled. Add rice and soy sauce and stir fry until thoroughly heated. .
