★ 2 T. olive oil
★ 1 lb. ground beef
★ ½ tsp. salt
★ ¼ tsp. black pepper
★ 1 loaf sliced Italian bread
★ 2 eggs
★ ½ cup Parmesan cheese, grated

Directions:
Directions:
In medium bowl mix beef, salt and pepper. Divide into 4 equal oval shaped patties. On broiler pan rack 4 inch from heat broil patties 4 minutes per side for well done.
In shallow pan beat eggs, put Parmesan in another shallow dish, dip one side of each slice of bread in the egg, then dredge in Parmesan. In a large skillet or griddle heat oil and brown coated sides of bread until lightly toasted. Spread untoasted sides with Dijon mustard. Place patties on bread and top with lettuce.
Makes 4 sandwiches.
