1 stick margarine
8-10 whole or 16 half chicken breas
seasoned salt
pepper
1/4 c sherry
6 c cooked rice (herb rice, wild rice)
2 cans cream of chicken soup
1/2 c mayonnaise
1 c sour cream
1 t paprika
1 T parsley flakes

Directions:
Directions:
Place margarine in 9 X 13 (or larger) baking dish in 350º oven and melt. Sprinkle chicken with salt and pepper generously. Remove pan from oven and roll each chicken breast in melted butter. Pour sherry over each piece and bake skin side up in 350º oven for 1 hour or until done. Remove from oven and cool until it can be handled. Tear chicken into pieces. Place cooked rice in 4-5 qt shallow casserole. To drippings in baking pan, add soup, sour cream, mayonnaise, paprika and parsley. Reserve enough mixture to go on top of chicken. Mix remainder with torn up chicken in casserole dish. Place reserved mixture on top of casserole. Bake in oven until bubbly, about 40 min. Makes 8-10 large servings.
