1 package smoked sausage, sliced into thin rounds
3 potatoes, diced
1 small jar banana peppers
1 bell pepper, diced
1 large onion, diced
3 tbsp olive oil
salt
black pepper

Directions:
Directions:
Cover a large baking pan with foil and spray w/ nonstick spray.

Place sausage, potatoes, bell peppers, and onion on baking sheet and drizzle oil over. Toss together in the oil, making sure everything gets coated.

Add salt & pepper. Go easy on the salt since the sausage is salty, but sprinkle generously with black pepper. Top w/ sliced banana peppers.

Bake at 400º for 35 minutes or until potatoes are tender.
