15 oz.package Un-sweetened shredded coconut
1 c. sliced almonds (or slivered almonds, chopped)
3/4 c. sugar (or slightly less)
zest of 1 lemon
1/4 tsp kosher salt
7 large egg whites (not beaten, just stirred)

Directions:

Heat oven to 325º.

In a large bowl combine coconut, almonds, sugar, lemon zest, and salt. Mix egg whites by hand using a fork for about 7-10 turns and combine together with the coconut mixture.

Drop mounds of the mixture (about 2 tablespoons) onto parchment-lined (or use Silpats) baking sheets. Space about 2" apart. Bake until edges begin to brown, about 20 minutes. Cool slightly on baking sheets then transfer to wire racks to cool completely.

These are SUPER easy to make and very tasty. They pair well with vanilla bean ice cream topped with sliced strawberries.

Do NOT beat the egg whites into a meringue, just use a fork to mix them slightly.
