2 eggs
1 c. milk
2/3 c. flour
1/4 tsp. salt
2 T. butter, melted

Directions:
Directions:
Combine eggs, milk, flour, salt and butter in a bowl with the electric blender.
Whirl at medium speed 1 minute or until batter is smooth. Refrigerate 1 hour.
Heat a 8 " skillet or crepe pan and butter lightly.
Pour in a scant 3 T. batter for each crepe and quickly rotate the skillet to spread the batter evenly over the bottom. Cook very briefly, just until crepe is set.
flip over with a spatula and brown very lightly on the other side.
Continue with remaining batter using a very small amount of butter to grease the skillet if needed.
Stack crepes with wax paper between each until all are made.
Serve for breakfast with jam, or fruit by speading then rolling the crepes.
Serve for lunch or dinner by filling with creamed chicken mixture with a touch of Sherry wine. Garnish with parsley
