1/3 c walnuts (or pecan) – toasted and finely chopped
1/4 c flour
3 tbsp butter
2/3 c milk
125 grams goat cheese, dices (Paillot de chevre cheese if you can find it)
3 egg yolks
salt and pepper to taste
5 egg whites

Salad:
Lettuce – your favorite
Vinaigrette – use your favorite

Directions:

In a small bowl, combine the chopped, toasted nuts with 2 teaspoons flour. Generously butter 6 ramekins. Sprinkle some of the nut mixture into each ramekin, coating it so that it sticks to the bottom and sides. Discard any excess.

In a small saucepan, melt butter and remaining flour. Cook for 3 minutes over medium heat, then add milk and bring to boil, stirring constantly. Cook for about 2 minutes, remove from heat and allow to cool. Add the cheese, egg yolk, salt and pepper and stir well and then set aside. In a bowl, beat the egg whites until almost stiff. Fold 1/3 at a time into the cheese mixture. Divide among the 6 ramekins.

For souffles to be cooked evenly, bake in a hot water bath in a preheated 350º oven. Place ramekins in a 9 x 13 baking pan, place pan in oven. Fill pan with hot water to half the level of the ramekins. Bake for 25 minutes. Remove from oven but allow the ramekins to remain in the bath for 15 minutes. Run a knife around the edge of each soufflé and unmold onto parchment.

These little soufflés are wonderful served with a simply green salad. The can be prepared in advance and simply reheated.
