4 tsp. Dijon mustard
1 tbsp. ketchup
1/4 tsp. worcestershire sauce
1/4 tsp. cayenne pepper
1 tbsp. olive oil
1 tbsp. butter
2 to 4 beef tenderloin steaks, 3/4" thick
1/4 c. brandy
1/4 c. whipping cream
2 tsp. dried parsley flakes
Hot cooked spinach noodles

Directions:
Directions:
1. Combine the first 4 ingredients in a small bowl; set aside.

2. Heat oil and butter in a skillet over medium-high heat until hot; add steaks and cook for 2 mins. on each side until lightly browned. Remove to serving platter.

3. Deglaze skillet by adding brandy and stirring until meat drippings stuck to pan loosen and dissolve. Reduce heat; add mustard mixture and cream; stir until blended.

4. Return steaks to skillet; cook 5 to 7 mins., to desired doneness, turning once.

5. To serve, arrange steaks on platter. Spoon sauce over steaks and garnish with parsley.

6. Serve with noodles as a side.

*Delicious when paired with Lemon Carrots recipe; and don't forget dessert!
