"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 c. water
2 T. cornstarch
2 c. blueberries (fresh preferred)

Directions:
In a small saucepan, combine sugar and cornstarch thoroughly. Add water. Measure ˝ c. of blueberries and crush. Add both crushed and uncrushed blueberries and cook over medium heat, stirring constantly until thick. Boil (about two minutes) until “clear.” The mixture will have thickened and have a sort of gloss. Great on pancakes (especially blueberry pancakes) or the blueberry cream cheese pie. One batch of glaze is usually about right for two blueberry cream cheese pies (or one pie with some leftover for pancakes).
