1 1/2 c. butter, at room temperate
1 1/2 c. sugar
1 1/2 c. brown sugar
3 eggs
1 tbsp. vanilla
3 c. all purpose flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tbsp. cinnamon
1 tsp. salt
3 c. semisweet chocolate chips
3 c. old fashioned rolled oats
2 c. shredded coconut (I use craisins instead)
2 c. chopped pecans

1. Preheat oven to 350 degrees.

2. Beat butter on medium speed for about 1 minute. Add sugars, beat until fluffy (about 3 minutes).

3. Add eggs, one at a time.

4. Add vanilla.

5. Stir in flour, baking powder, baking soda, cinnamon and salt until combined.

6. Add chocolate chips, oats, coconuts (or craisins), and pecans.

7. For each cookie, drop 1/2 c. dough on a greased cookie sheets, spacing about 3 inches apart. Bake 17-20 minutes, until lightly golden. You can make smaller cookies, but adjust your cooking time accordingly.

The first time I made these, I used a 1/2 c. measuring cup and the cookies were huge. I now use a large cookie scoop to make more normal sized cookies. A 1/4 c. measuring cup would work too.
